The Legend of the creation of Oolong Tea
In China, between the Ming and Qing dynasty around 1912, it is said a Chinese man who gathered tea leaves he collected in his wicker basket that lay on his back saw a hare and started to chase it desiring to kill and eat it, forgetting the appetite he had for the tea leaves that fluttered by his every step inside his basket. He ran up and down the mountains and during this persecution, caused a natural and accidental oxidation of the tea leaves inside his basket, because he noticed 30% of the green tea leaves around the edges had changed color. Thus, oolong tea was born.
